Dr_Bombay<p>Update: Aaaaand the result of this week’s sourdough bake? SUPER flat, sigh. Almost comically so. i paid very close attention to it, too — it was ready to go in the oven at only 2.5 hrs of proofing on the counter. it’s rather frustrating, since my first two times making this recipe were stellar, but ever since then i’ve struggled.
