On Sunday I wanted to try something new, a Chinese dish with spiced tofu and garlic chives. I had bought garlic chives last week on a whim but they weren’t enough for this dish. Nevermind, there were also radish leaves and some other Asian Greens available in my fridge and that’s what I used to bulk this up with. I added some radish slices as garnish, I think they add a nice contrast ☺️ All in all a success.

Over the last days we had some easy food.

Meatless Monday:
Spaghetti with fried mushrooms and a lemony pesto sauce. I still had some beer batter left and used that for tofu again.

I wanted to cook aubergines today but somehow I tricked myself, there were none in the fridge even though I was sure that I had bought them. 🤔 However I had sardines in sesame sauce (yum, all the way from Japan via kokorocares.com), king oyster mushrooms and Pak Choi, so there were possibilities.

I decided to do something similar to the aubergine dish with the mushrooms, I halved and fried them and then put a miso glaze and Shichimi Togarashi on top and grilled them in the oven - I thought they were very good. The Pak Choi got blanched and served with a leftover portion of the aromatic sauce that I like so much.

In addition I dug out another product I had in the cupboard (also from kokorocares.com), a black vinegar paste that we used as rice seasoning and my husband was really happy with that one.

Bitter melon take #2. We had an Okinawan Chanpuru, a bitter melon stir-fry with tofu, sliced pork belly and egg (loads of protein 😅). Soy sauce and dashi are used for seasoning in this recipe.

I have to admit that while bitter melon is not my enemy, it’s also not my new best friend. As it’s hard to get for me anyway that’s perfectly fine. But if someone would cook it for me I’d eat it. Maybe another way of preparing this would change things somewhat.

Knowing all of that, I had opted for bacon instead of more neutral tasting pork belly and was happy that I had just one bitter melon left (instead of the 1.5 needed per the recipe). We had this dish with rice and (unlike last time) didn’t need any additional seasoning to make it better.

On Sunday our Ukrainian friend will cook for us at our place. I was trying to buy the needed ingredients but could not find any ready made vegetable stock or clarified butter in our close by shops. Sometimes I’m thinking our little supermarket in front of the house is the last existing pocket of the GDR that somehow is hiding in there. They often don’t have very basic things for weeks on end or don’t have enough of others and run out too quickly.

Therefore I found myself in the kitchen today making stock. On Saturday I will make clarified butter. Both are easy but they eat away from my free time. I’m just glad that I bought a very fine mesh strainer in an Asian supermarket a while ago, it’s incredibly handy for jobs like these.

I needed to finish some Teriyaki sauce, therefore we had delicious salmon again. In addition I blanched some Pak Choi and put an aromatic sauce over it and also fried a few oyster mushrooms. Of course there were also Japanese rice and Miso soup.

I always know I’ve done really well when there is complete silence while eating: my guys were shoveling in the food so quickly there was no time to speak. 😅

The other day I stumbled across a video that showed how to get the bones out of a chicken drumstick relatively easily. As my guys hate meat with bones 🤷🏼 and I prefer the bits with bones because the meat is better, this seemed to be a good compromise to get the meat I like and for them to stop complaining about how cumbersome the bones are… 🙄 So in the end I had some nice flat drumstick meat with skin and decided to bake them in the oven seasoned and slathered with chilli jam. It took hardly any time for the oven thermometer to tell me that the chicken meat had reached the necessary temperature and I gave it another five as the other food items on the hob still needed finishing.

Our sides were Kiriboshi daikon coleslaw with Napa cabbage, mayonnaise and mango mustard; and an utterly delicious Pak Choi/mushroom salad.

All in all this was a success even if the chilli jam chicken didn’t match the Japanese side dishes that well. 😜

I guess I’m not made for fine dining. 🙃

I bought a tiny jar with two “summer truffles”. My recipe research yielded two recipes that seemed suitable but one of them was more or less only truffles and pasta and the other one had elaborate homemade pasta with truffles in it accompanied by a leek, white wine and cream sauce. So I decided on bavette pasta with the leek sauce and truffles on top. I guess I got the wrong grater and my truffle slices were too thick.

Turns out I don’t like the taste of truffles. I broke my slices up, that way they were bearable in the sauce that wasn’t half bad, especially with the grated Parmesan, but I won’t have those truffle things again.

Schnitzels, yes, but made from sliced aubergines, a coleslaw made from fennel and rice with furikake. This actually wasn’t meant to become so Japanese but I was too lazy to make the planned potatoes, rice is just so much easier. In the end I thought I made the right call, especially once I got the Bulldog sauce and Kewpie mayonnaise out 😇😋

My husband loves hot and spicy food, so do I - but to a lesser degree. For this very aromatic soup I used an imported Thai red curry paste from an Asian supermarket and it was slightly too hot for me but just right for my husband. 🤷🏼

Another Monday, another Spaghetti dish. Only that I used Capellini because they are thinner and cook faster.

This is a take on Spaghetti all’Assassina (Assassin’s Spaghetti) from Puglia. It’s easy to make but it is an interesting variation to other long pasta dishes as you cook the pasta in the sauce. That’s why I thought the thinner Capellini I found in the store cupboard were perfect. It still took a while to cook them. We were happy with the results and as usual paired our pasta with a fresh lettuce salad.

Something new: Thai Basil Chicken (Pad Kra Pao Gai). It appealed to me as the recipe creator suggested that soy mince could easily replace chicken mince and, yes, it worked perfectly.

There were lots of fish sauce and basil, ginger, garlic and chillies, so I just had to try it out. I also made Prik nam pla, the typical condiment made from fish sauce and chillies. The egg wasn’t totally necessary but it was still nice to have.

Next time I might increase the amount of the soy mince somewhat but we were all happy with our meal.

Spaghetti aglio e olio. I have finally learned how to make this properly - by using some of the pasta cooking water to create a nice sauce that gets partly absorbed by the pasta.

Of course I had to give it my own twist. As I have too many of them in the freezer I used a deseeded Habañero pepper. It was spicy but just about manageable for me. My husband loved the heat and I was just happy to be able to grate more hard cheese 😅

Another day, another oven dish. I had pierogies in the fridge and decided I wanted them done in the oven with leftover frozen harissa seasoned tomato sauce, broccoli stem leftovers, cauliflower florets, soy cream and plenty of grated hard cheese. It was so filling that we couldn’t even eat all of it in one sitting but it was yum.

My first ever biryani. I had a biryani years ago in a restaurant but I can’t remember much about it, I didn’t even realise that it’s made in the oven. 😅 This one is a meatless version with a tofu, made from a Vegan Richa recipe and it did not disappoint at all. I had to use more rice and water than stated as a recipe for four people doesn’t go far in this three person household and a cup of rice was not enough since we didn’t have anything to eat with this. And nothing else was needed, this was full of taste and didn’t lack in anything.

Pub food Sunday - but at home. More deep frying, but only the fish: the wedges were done in the oven on air fryer setting by my husband.

I used basically the same beer batter as yesterday for the fish, only it seems it wasn’t quite as thin and did more of what it was supposed to do, blister up a little.

Served with garden peas, lemon wedges, ketchup and mayonnaise. 😋

The last two days we had Indian style fried chicken breast and spinach in tomato sauce with basmati rice. Actually, todays version was with May turnip greens and and also aloo chaat. 😋

As for the Eat-30-Plants-A-Week plan: with 70 different types of plants in total we have far surpassed the target this week. I guess it was simply a really varied vegetable week, I can’t really see us eating that many plants all the time. But 30 should be possible. Especially when you find a display like on photo 2, loads of different aubergines in our local supermarket - I’m seriously impressed!

The last two photos show a small but pretty bowl that somebody discarded. I found it in our building’s refuse area and just had to pick it up.

Are you familiar with Japanese, or better, Okinawan Fu? It looks like sliced white bread and in a way that’s what it is, but it’s made entirely of wheat gluten. In Japan it’s used to make all sorts of cooked dishes. I really should have taken a photo of the little bread slices before cooking them as it’s completely unrecognisable in my dish after I cut it into 1 cm cubes and soaked it in egg. We quite like it.

The dish I made is called Fu Chanpuru, which essentially means Fu with something mixed (in this case stir-fried). I loosely followed a recipe but replaced the sausage with rehydrated shiitake mushrooms, the fish based dashi with shiitake dashi (to make it vegetarian), and also added some chiffoned baby spinach and a little leftover shredded Napa cabbage.

As I had too many bean sprouts, I used the rest of them as salad with a leftover dressing of sesame oil, red wine vinegar, soy sauce and sugar.

At the end I decided that I also wanted a mashed up pickled plum with me rice, as I like the tangy kick from it. My husband opted for red cabbage kimchi instead.

I cooked this pasta with lamb ragù dish from a recipe recommended yesterday by @xvf17@sfba.social and what can I say, yet another good meal was enjoyed in this house. 😋 All the different tastes (fennel, mint, harissa, lamb mince, etc.) worked really well together and there was a nice kick to it.

It didn’t take me quite as long as advised in the recipe (2 hrs 15 mins) but I only made half the amount and didn’t have to wait for that much liquid to evaporate, so everything was done after 90 minutes. It was really worth every minute. 👌🏻

As pasta I used a type of Rigatone as that works really well with ragù, and I like this one despite being wholemeal.
