Notes of cherries and alcohol in the decanter, followed by a 40 minute decant. The alcohol cleared away to leave the cherry to bloom. Perhaps a little raspberry and balsamic. Seems medium purple with a light pink edge, though the light here is not great. Medium body. Palate: powdery tannins. Maybe a little plum or blackberry, but nothing particularly fruity here. Medium acidity, bright. Dry. Semi-tart. Lotsa legs. Not particularly complex.

Had second glass with homemade pizza with Italian sausage, onions, mushrooms, tomato sauce, mozzarella, Monterrey Jack infused in the crust. The wine maintains its tartness and acidity, definitely doesn’t get lost behind all those bold flavors. Wife tastes tartness and tannins and enjoys this wine more than I do. Just not my thing. Given the scores I saw elsewhere, maybe I’m weird.

Tasted this charming vin santo rosato last evening. The pink version, called "ochio di pernice," or eye of partridge, must include at least 50% Sangiovese mixed with the more customary Trebbiano and/or Malvasia. This wine has 150g RS but firm acidity, and it was a good dredge for our orange almond biscotti.

#mondaymotivation If there is a classic dinner in our household, this is it, affectionately named “Chicken Mix-up”. It essentially consists of Grilled Marinated Chicken Breast tossed with Extra Virgin Olive Oil, Garlic, Pancetta, Sweet Pepper, Kalamata Olives, Broccoli Rabe & Pasta of Choice (here Penne). Dust it with a healthy dose of Grated Parmesan & you have an addictive dinner!

Here tonight, I pair it with a #Chianti Classico Riserva from @SanFelice offering bright, red cherry, blackberry, Meyer lemon, violets, rosemary with subtle oak & mineral notes.
