Pizza night tonight. It’s topped with regrets & second-guessing.

Oh, did I say that out loud?

I sautéed a half-pound of mushrooms. They’re on the pizza now. And a couple small sticks of pepperoni. A small drizzle on honey to counterbalance the heat. This time, I used clover honey, but i prefer buckwheat honey.

I’m half way through my regrets & second-guessing, & don’t plan to stop.

I’ll worry about consequences later.

The recipe is from Gennaro's Italian Bakery - every recipe I have tried so far works the first time. And the doughs are wonderful. The only complaint is that (for the flour that I am using) there is a difference in the weight and volume measures he gives. The cup measures give you too much flour for the yeast and water. So I use the weight measures.

He makes a very simple pizza bianca (ie pizza without tomato sauce as its foundation layer), with almost no toppings at all. Google if you want more exotic ones. But I love a bianca with just evo, garlic, salt, so I am onboard with him. (Sometimes I add potato slices.)

To make PB, take your fav pizza dough, roll it thin, add any toppings prior to baking, bake 10 mins in very hot oven. Add any post-baking toppings eg rocket or basil.

The dough is proving - I do so love working with dough by hand, as it changes so dramatically. A glorious, meditative activity.

Made a salty paste of garlic, spring onions, green chilli for the top of the pizza bianco this time.

Some of the dough is in the fridge for tomorrow or the next day.

A neighbour has decided to take a chainsaw to the fallen tree - he has a wood fire. The birds will miss that part of the tree. 😢

After spending the day working on house stuff, we’re enjoying some snacks and martinis with cocktail umbrellas (because we decided during the pandemic that little umbrellas make all drinks more fun) while we wait for the homemade pizza crust to rise and the sauce to reduce. #PizzaNight
