Ganga<p>.... The recipe is from Not Just Jam, by Australia's own Matthew Evans. The recipe is publicly available, so I share it here.</p><p>Other recipes can be found here <a href="https://www.sbs.com.au/food/article/make-jam-be-happy/qofxhqmkx" rel="nofollow noopener" translate="no" target="_blank"><span class="invisible">https://www.</span><span class="ellipsis">sbs.com.au/food/article/make-j</span><span class="invisible">am-be-happy/qofxhqmkx</span></a> and there are more if you want to search.</p><p>Also see these honey-roasted quinces from the same author: <a href="https://lorriegrahamblog.com/honey-roasted-quince-the-commons-mathew-evans/" rel="nofollow noopener" translate="no" target="_blank"><span class="invisible">https://</span><span class="ellipsis">lorriegrahamblog.com/honey-roa</span><span class="invisible">sted-quince-the-commons-mathew-evans/</span></a></p><p><a href="https://mastodon.au/tags/Quinces" class="mention hashtag" rel="nofollow noopener" target="_blank">#<span>Quinces</span></a> <a href="https://mastodon.au/tags/FromTheKitchen" class="mention hashtag" rel="nofollow noopener" target="_blank">#<span>FromTheKitchen</span></a> <a href="https://mastodon.au/tags/AustralianAuthor" class="mention hashtag" rel="nofollow noopener" target="_blank">#<span>AustralianAuthor</span></a> <a href="https://mastodon.au/tags/WhatIAmCooking" class="mention hashtag" rel="nofollow noopener" target="_blank">#<span>WhatIAmCooking</span></a> <a href="https://mastodon.au/tags/Vegetarian" class="mention hashtag" rel="nofollow noopener" target="_blank">#<span>Vegetarian</span></a> <a href="https://mastodon.au/tags/food" class="mention hashtag" rel="nofollow noopener" target="_blank">#<span>food</span></a> <a href="https://mastodon.au/tags/cookbooks" class="mention hashtag" rel="nofollow noopener" target="_blank">#<span>cookbooks</span></a> <a href="https://mastodon.au/tags/MatthewEvans" class="mention hashtag" rel="nofollow noopener" target="_blank">#<span>MatthewEvans</span></a> <a href="https://mastodon.au/tags/NotJustJam" class="mention hashtag" rel="nofollow noopener" target="_blank">#<span>NotJustJam</span></a></p>
Ganga<p>Good morning all you beautiful ones. Welcome to and overcast Saturday with the chance of a late drizzle with thunder. Not much rain, but every drop counts.</p><p>I am in the kitchen early. The remaining quinces are in the oven, baking whole! Yes, I know! I have never done this before, but there is a first time, and I love first times.</p><p>They will hopefully be turned into comfits - so the recipe claims - the soft quinces pulp, sieved of its inner bits, will be simmered with sugar, set, cut into squares and rolled in sugar.</p><p>I plan to dehydrate them for longer shelf life, and may not roll them in sugar. They should be sweet enough.</p><p>These final quinces have the most exquisite perfume. I will miss them gracing the table and their sweet aroma drifting through the kitchen.</p><p><a href="https://mastodon.au/tags/FromTheKitchen" class="mention hashtag" rel="nofollow noopener" target="_blank">#<span>FromTheKitchen</span></a> <a href="https://mastodon.au/tags/food" class="mention hashtag" rel="nofollow noopener" target="_blank">#<span>food</span></a> <a href="https://mastodon.au/tags/WhatIAmCooking" class="mention hashtag" rel="nofollow noopener" target="_blank">#<span>WhatIAmCooking</span></a> <a href="https://mastodon.au/tags/Vegetarian" class="mention hashtag" rel="nofollow noopener" target="_blank">#<span>Vegetarian</span></a> <a href="https://mastodon.au/tags/Quinces" class="mention hashtag" rel="nofollow noopener" target="_blank">#<span>Quinces</span></a></p>
Ganga<p>And this is the last one, promise. </p><p>Look at all these fabulous savoury quince dishes! Not all vegetarian, of course, but look at the ones that are! Enjoy.</p><p>I have ALL the ingredients for this one (pic) but it uses raw quince. Raw, it can upset the stomach. I'd cook it and the dish would still be fabulous. (I'd need to get some figs, I lied.)</p><p><a href="https://marocmama.com/savory-quince-recipes/" rel="nofollow noopener" translate="no" target="_blank"><span class="invisible">https://</span><span class="ellipsis">marocmama.com/savory-quince-re</span><span class="invisible">cipes/</span></a></p><p><a href="https://mastodon.au/tags/food" class="mention hashtag" rel="nofollow noopener" target="_blank">#<span>food</span></a> <a href="https://mastodon.au/tags/quinces" class="mention hashtag" rel="nofollow noopener" target="_blank">#<span>quinces</span></a></p>
Ganga<p>Another tip: Don't throw out the pips and cores from quinces - dehydrate/dry them and keep in a jar. Seep a few in boiling water for a delicious tisane that is said to be perfect for colds and sore throats.</p><p><a href="https://mastodon.au/tags/quinces" class="mention hashtag" rel="nofollow noopener" target="_blank">#<span>quinces</span></a> <a href="https://mastodon.au/tags/FromTheKitchen" class="mention hashtag" rel="nofollow noopener" target="_blank">#<span>FromTheKitchen</span></a> <a href="https://mastodon.au/tags/Food" class="mention hashtag" rel="nofollow noopener" target="_blank">#<span>Food</span></a> <a href="https://mastodon.au/tags/Vegetarian" class="mention hashtag" rel="nofollow noopener" target="_blank">#<span>Vegetarian</span></a></p>
Ganga<p>QUINCES!!!!!!!!!!</p><p>I picked two quinces today - probably a little underripe but they had weighed a couple of branches right down to the ground. So now they are perfuming the dining room, along with some makrut limes that I also picked.</p><p>Then I was searching out savoury quince recipes, and came across this. OMG quince recipes for everyone -sweeeet and savoury 🥇 </p><p><a href="https://www.gourmettraveller.com.au/recipe-collections/quince-recipes-14652/" rel="nofollow noopener" translate="no" target="_blank"><span class="invisible">https://www.</span><span class="ellipsis">gourmettraveller.com.au/recipe</span><span class="invisible">-collections/quince-recipes-14652/</span></a></p><p>Ping <span class="h-card" translate="no"><a href="https://chaos.social/@levampyre" class="u-url mention" rel="nofollow noopener" target="_blank">@<span>levampyre</span></a></span></p><p><a href="https://mastodon.au/tags/Food" class="mention hashtag" rel="nofollow noopener" target="_blank">#<span>Food</span></a> <a href="https://mastodon.au/tags/quinces" class="mention hashtag" rel="nofollow noopener" target="_blank">#<span>quinces</span></a> <a href="https://mastodon.au/tags/FromTheGarden" class="mention hashtag" rel="nofollow noopener" target="_blank">#<span>FromTheGarden</span></a></p>
