I improvised this vegan almond & tofu-stuffed loaf based on a picture I’d seen somewhere, and holy shit was it delicious! 🤤 I baked it a bit too long, but otherwise this might be one of the most delicious things I’ve ever made. I think I’ll make this my regular Christmas dinner … turned out to be a perfect little savory Yule log, even though that wasn’t what I had in mind (it’s a bit off season for that, obviously 😂)

A very cost effective alternative to eggs is aquafaba, the water from chickpeas. Chickpeas are very cheap and the water from them makes a great alternative to eggs in baking as they can whipped up. So you can use the water in baking and the chickpeas in a wide variety of recipes.

On Sunday I wanted to try something new, a Chinese dish with spiced tofu and garlic chives. I had bought garlic chives last week on a whim but they weren’t enough for this dish. Nevermind, there were also radish leaves and some other Asian Greens available in my fridge and that’s what I used to bulk this up with. I added some radish slices as garnish, I think they add a nice contrast ☺️ All in all a success.

Nur das lange Rühren des klebrigen Teigs in der Pfanne, passt nicht zur Arthrose in meinen Schultern.🥴 🪫
Der Teig hätte wohl viel länger gerührt werden müssen. Die Herstellung von Teigplättchen zum Füllen, hat nicht funktioniert.
Aber so ging es auch, unser Experiment - Apfelkuchen mit Vollkorn Weizen-, Reismehl-, und Mandelmehl passte prima dazu.
Adzukibohnenpaste wird hier auf alle Fälle ins Programm aufgenommen, nur in anderer Verpackung. 😊 Gäste waren begeistert, Anko nur halb so süss, wie fertig gekauft, ist einfach besser.
Man schmeckt noch was von den Adzukibohnen, nicht nur Zucker.

I'm still against eating animals, but I see no reason to not eat milk, cheese, and yogurt, foods that contain many of the vital nutrients we need to live (protein, calcium, vitamin D, vitamin B12). The vegan diet plan, in my opinion, goes unnecessarily to far with its opposition to all animal products and makes it more difficult to get vital nutrients that are needed for basic survival, which is why lacto-vegetarianism is the most logical diet for me. #veganism #vegan #vegetarian #veganfood

I've decided to switch from veganism to vegetarianism, specifically lacto-vegetarianism. Veganism is too restrictive for my own health. Sure, you can "technically" aquire essential nutrients on a vegan diet, but it's easier said than done, and often requires you to spend more money (that I don't have) on vegan alternatives of foods that you could otherwise easily get from any store, and for what? To feel better (I don't)? To be healthier (I'm not)? #veganism #vegan #vegetarian #veganfood
