I learned late how baking soda is great when cooking beans — but: if you are cooking beans to make tempeh, do NOT use baking soda. It makes the beans slightly alkaline — toxic to Rhizopus oligosporus, the tempeh fungus. For beans cooked for tempeh, use plain water.
For regular cooking of beans, I now always use a little baking soda.
