I'm lactose intolerant so tend to avoid creamy soups - not a fan of the more popular New England cream based clam chowder. I made this recipe last night, and it came out perfectly. I haven't run across many recipes that didn't need to be adjusted in some way, so this one is exceptional. Made "mild" by our standards for the kiddos.

Basmati rice and naan. Ten servings for $40. Normally, this is a $15-18 plate in a middle of the road restaurant.

I'm trying out a new recipe. I'll let you know how it pans out for me. My issues with milk seem to be with the biology that comes along with it. I eat this dish in the restaurant and it hasn't killed me. I also think that the longer you stew/brew/simmer the sauce, the better for me. Breaks down the lactose and kills any other biology that came with the yoghurt and cream.

I cooked this pasta with lamb ragù dish from a recipe recommended yesterday by @xvf17@sfba.social and what can I say, yet another good meal was enjoyed in this house. 😋 All the different tastes (fennel, mint, harissa, lamb mince, etc.) worked really well together and there was a nice kick to it.

It didn’t take me quite as long as advised in the recipe (2 hrs 15 mins) but I only made half the amount and didn’t have to wait for that much liquid to evaporate, so everything was done after 90 minutes. It was really worth every minute. 👌🏻

As pasta I used a type of Rigatone as that works really well with ragù, and I like this one despite being wholemeal.

I was craving mac and cheese but I have a rough relationship with dairy so I thought I'd try making a fake cheese sauce. It turned out great! I won't claim it tastes like cheese since it's been a long time since I last had dairy but it is cheese adjacent. Rich, creamy and brightly colored. I had been craving these savoury Indian chickpea flour pancakes for a while and today was finally the day I decided I had enough time. I like to eat them with roasted potatoes in an Indian style marinade and those always take quite some time. Just add some ketchup, chutneys, pickles and yogurt, perfect! So, so good!

Mackerel, salted and baked in the oven, sesame green beans and egg fried rice for me (using up yesterday’s leftover rice, the others had fresh plain rice). Not exactly a fast meal as I had to first pluck quite a few long fish bones from the six fillets and that took some time. But definitely delicious.

Since Brexit finding good British cheddar cheese has become a bit of a lottery here in Germany. I spotted this beauty in our local supermarket today. There were three different types, one was simply smoked cheddar, then this “Green Thunder” cheddar with roasted garlic and herbs, and a third one that I instantly forgot after I had noticed the Green Thunder. 🫣😆 I bought it despite the hefty price of over €8. I appreciated that there was no superfluous packaging, the wax layer is enough protection.

We cut it open at home and after taking a first sniff we decided to give it all the reverence it demanded. One half was devoutly shared by three people today, and it was tough not to eat it all in one go. It was that good! It might have even been the best cheddar I ever had. I’m really tempted to go back and buy more - but the price is stopping me.

Back to the classics. My husband made the wedges and I made the fish in beer batter. Our son said it was the best homemade iteration of fish and chips yet, and despite saying that almost every time 😆 he sounded genuinely in awe. 🙏🏻 And I have to agree, the wedges and the fish were perfect, I was actually impressed by our own cooking. 😅 Please, people, do try making this dish yourselves, don’t buy freezer chips or fish in batter, they are absolutely awful compared to this and take almost as long to prepare. The best way to do this is with two people and that way cooking is more fun anyway!
