Karen Mardahl<p>Today was my first harvest from the greenhouse. A small cucucumber, called school cucumbers in Danish because they are the perfect size for a lunchbox. And the lettuce has been consistently delivering for a while, too. They are in raised beds in front of the house. But the cukes are the first delights from the greenhouse where we have two types of cucumbers, two types of capsicum, and four types of tomatoes.)</p>

It was a big success! Tzatziki dip, and finally learned how to say it Zah—zee—key. Shredded cucumber that set in a wire sieve till the watery juice comes out. Plain Greek yogurt. Olive oil, lemon juice, salt and then after it’s all mixed, mint leaves cut up fine and dill. We love it!
